Complete chicken caprese recipe

The chicken Caprese is a delicious and simple recipe to make where you take some chicken breasts and stuffed them with the ingredients of a typical Caprese salad: tomato, mozzarella cheese and basil. We have made this recipe a couple of times, but this version was definitely much better than we prepared for the first time. Ingredients for Chicken Caprese recipe:

  • 4 chicken fillets.
  • 200 grams of whole mozzarella cheese.
  • 8 dried tomatoes.
  • 8 slices of smoked bacon.
  • 1 tablespoon of dried basil.
  • 8 tablespoons of balsamic vinegar.
  • 2 tablespoons of olive oil.
  • 4 crushed garlic.
  • Salt, pepper to taste.

Step 1

Take the chicken Milanese and mash with a kitchen hammer until they are very thin. Put them between two pieces of plastic so they don’t stick together. I used a clean open bag and an empty wine bottle to do this.

Step 2

When they are very fine, add the crushed garlic, salt, pepper, olive oil and 2 tablespoons of balsamic vinegar. Let rest for at least 40 minutes.

While chopping the mozzarella cheese into large strips. Do not buy sliced ​​or grate it because it will disappear when cooked. They must be large chunks. Chop a very large pair for each Milanese. Remove the chicken and set aside. Lower the heat and cook the sauce for about 4 more minutes to reduce a little.
