Recipe: Light cous cous salad, mango and mint

The light salad of cous cous, mango and mint that I bring you today is one of those wonders I have found lately, so if you like salads as much as me, you’re in luck.

We all know how important it is to consume vegetables and vegetables in our diet, especially if it is fresh vegetables. To create balanced dishes, I often add some cereal to the salads and sometimes also some protein. So, this light cous cous salad, mango and mint can become a unique dish if you add a few pieces of chicken, turkey or Salmon, for example. Your imagination is the limit.

Ingredients for 4-6 people

  • 100 g semolina
  • 6 ginger stems
  • 1 ripe mango
  • 1 medium or small fresh red chilli
  • 4 thick stalks of mint
  • 60 g fresh parsley
  • Half cucumber
  • 8-10 radishes
  • Juice Of a lemon
  • 2 tablespoons of extra virgin olive oil

How to make light cous cous salad, mango and mint

First of all, we prepare the semolina of cous cous, according to the instructions of the packaging. Once ready, we let it cool and reserve it for later. Chop the garlic, chop the parsley, the mint, the chilli and we are mixing all the ingredients in a bowl. Peel the half cucumber, remove the seeds and cut it into smaller pieces.

Then peel and cut the mango and add it to the salad. We do the same with the radish, after washing and cleaning the tips. It might look like too much parsley, but eye, it is one of the most important ingredients in this recipe, so we should not lower the amount. Incorporate the cous cous and to finish, prepare the salad with lemon juice, olive oil and salt and pepper to taste.
